A little about me…

Food means so much more to me than what we eat. It’s a source of connection - to the land, our bodies, our ancestors and each other. Cooking meals for people is my life’s greatest joy and purpose. It is my work, my pleasure and my form of service to the world and those around me. I love to cultivate environments where we are able to come together - around a table and a dish, and share in life’s greatest pleasure - to eat, drink, and be merry!

I have been cooking professionally for over a decade, and have learned from cooks and chefs all over the world. But the greatest lesson that cooking has taught me, and continues to teach me is to be gracious. Gracious with the land, the animals, to ourselves and each other. To celebrate life whenever it’s possible, and to always use olive oil and garlic (or maybe that’s just the Italian in me).

My cooking style is …

Familiar foods with a lot of flavor. I am very inspired by whatever is growing locally and with the seasons. I believe that no one does flavor better than nature, and cooking should only enhance what the earth gives us. I am Italian by heritage so I naturally gravitate towards Mediterranean tastes and techniques. I love food that feels fresh, lively, colorful and is bursting with flavor. Here in Hawaii I am inspired by the local and Asian influences in cuisine. And my favorite foods are mangos, dark chocolate and margherita pizza.
